I've been thinking about the relationship between theory and practice too, but I've been approaching it from a different direction. In the case of Grimm's work, I think it's fair to say that her theory (postmodernism) has grown from practice. She describes a sense of discontinuity between her educational experiences (including her WC experiences) and widely accepted WC theory. Her work, I think, grows out of an attempt to rethink theory in the light of practice.
So you asked if practice has lagged behind theory. Maybe the question is whether theory has kept up with practice. (I think that what we _do_ in the WC is often better than what we say we do.)
